As i'm looking for a new cookie project it dawned on me, it's Girl Scout season! Those little delicious cookies everyone craves every winter, girls knocking on your doors selling you cookies, waiting a month or more for your cookies to arrive, that's how it use to be anyway. Today, the cookie names have changed, the boxes have gotten smaller, the price has gone up and the parents seem to do the majority of the selling, and more importantly, the ingredients took a turn for the worst! 

So i created my own,The Peanut Butter Pattie. Made with delicate shortbread dough, chilled, rolled out and cut into perfect crispy, delicate buttery cookies.Today you can can go to almost any grocery store, ground your very own Peanut Butter, unroasted, roasted or even honey roasted peanuts, making a great creamy peanut butter, what is better than that? I use roasted peanuts sweetened with raw sugar, butter and a dash of vanilla, whip until light and fluffy. 

The Shortbread cookies are baked and cooled, i load them up with fluffy Peanut Butter, sandwich the cookies, drench them in velvety tempered dark chocolate. I use tempered chocolate for a nice chocolate bite. Tempering the chocolate is important, raising the melting temperature, adds a firm bite and won't melt in your hand, plus it adds a beautiful shine to the finished cookie.
